As promised, the occasional Monday will feature great insights from guest bloggers. This week, Jessica Cottrell puts the “twist” on chicken pot pie, using Immaculate biscuits . . . and making all of us hungry.
Jessica lives in Southern Connecticut with her husband and 3 amazing kids. Addicted to decaf lattes, she describes herself as “chronically frazzled, but well-intentioned.” And we think that’s the best kind of frazzle.
Of her cooking style, she tells us, “I dislike following a recipe and find that I enjoy cooking more when I can just toss a bunch of ingredients together and see what happens. The result is that I rarely make the same meal the same way twice.”
Here’s our favorite insight into Jessica: “I get ridiculously excited about things like making jam and using my composter which probably makes me really dull, unless you happen to be into jam or composting.”
