I love the holiday season — while we’re all rushing around crossing things off the TO-DO list, I also love that friends, family, and neighbors are more likely to stop by and linger for a bit. Whether they’re picking up kids or popping in to see the tree, they seem pleased by the savory treats I’ve been putting out to go with tea or a glass of bubbly. And, followers of IMPATIENT MOM know that it’s gotta be fast and simple. This recipe needs:
2 pks of Immaculate Baking crescent rolls
1 cup toasted pine nuts
1 cup crumbled goat cheese.
1 cup drained and chopped sun dried tomatoes.
Preheat the oven to 350 degrees, and mix the nuts, cheese and tomatoes together.
Open the crescent roll cans (remember, they’re under pressure!) and lay out each triangle on a baking sheet. Put a healthy tablespoon of the mix onto the triangle and rolls from the smaller point to the larger. Repeat!
Bake as directed and let cool. Then, with a serrated knife, I cut small rounds and serve on a pretty platter. Fast, easy, delicious. You can also vary this up a bit; a friend used chopped olives and feta cheese — amazing!
