Bacon and eggs are way up on my list of Breakfast of Champions. And then I thought I’d put a little Immaculate twist on this, and serve up some bacon and eggs in our biscuit cups! And that, my friend, makes a terrific start to a fabulous day!
If you’re going to spend most of your weekend mornings in bed, at least serve up some breakfast in bed, too! And that would be exactly where Bacon & Eggs In a Cup would come in! The perfect mess-free, hassle-free, 3-ingredient super easy, and wholesome breakfast in bed option! Weekend’s coming up, better stock up some eggs and bacon and start your mornings right!
It’s March. And Madness is in the air. (And apparently so are snowflakes… if you live in the Midwest 😦 )
But whether or not you’re a basketball fan, I’d like to think that no one’s going to turn down opportunities to chow down with friends and family at viewing parties! And when it comes to yelling and cheering at sporting events, nothing fuels on that excitement better than bacon and cheeseburger! And if you’ve been following Better Cookies for a while, you know how I love my bacon 🙂
I had intended to do a bacon cheeseburger pie recipe (which I’ll still probably do at some point), but then thought that people may get a bit intimidated with the bacon and cheeseburger combo, but if I can provide a little portion control, everybody wins! And that’s how these Bacon Cheeseburger Cups came to be!
I actually used 1 lbs of ground beef, but then had quite a bit leftover after I tried to smother each crescent cups with the burger mixture. 1/2 lbs should be more than enough, unless of course you like your double cheeseburgers, then by all means, knock yourself out!
These Bacon Cheeseburger Cups would make the perfect bite-size party appetizers, giving you the energy to do victory dances when your team scores, but then a small and quick enough bite to free your mouth up to scream at the referee whenever he makes a bad call! See? Perfect.
So… it’s Pecan Day AND International Waffle Day today!
Don’t mistaken National Pecan Day (4/14/14) with Pecan Day (3/25/14). Apparently there’s a difference between the two like International Waffle Day (3/25/14) is different from National Waffle Day (8/24/14). It’s all very confusing, but really all we care about getting some waffles! So the Immaculate solution to make everyone happy is… make some Pecan Waffles!
And then I threw in some bacon just cuz.
So this is what you do: You get 1 pack of our Immaculate Baking Co. ® refrigerated Vanilla Sugar Cookie Dough. Let it soften a little in room temperature before you add in 2 eggs and mix it with an electric mixer. I added a couple tablespoons of milk just to make sure the consistency is a little bit closer to a typical waffle batter. Then I added chopped up pecans and cooked bacon bits. Your waffle maker should be already preheated by now, and now we can let the waffle making begin! Of course, you can’t have waffles without drizzling on (or in my case, smothering it…) some maple syrup!
I’m seeing a pattern here with the recipes that really take off – Cinnamon Rolls and bacon have risen to the top as key success ingredients multiple times… so here’s an idea: Why not take two stupendously awesome ingredients, do a mash up, and make something even more awesome?
And so that’s exactly what I did. I have this Maple Bacon Monkey Bread to show for my daring genius.

With just 4 ingredients and our cinnamon rolls, you get to make one incredible bacon wagon 🙂 I thought I had baked it all, and then I plopped this log of mouth-watering yumminess on my plate, and its bacon glory rendered me speechless for a few seconds. You have to admit, our cinnamon roll bacon wagon is rather imposing. But in a yummliciously amazing way 🙂

I knew I wanted to try more bacon recipes, but I also wanted to make sure that these were recipes that had a good veggie pairing. I’m not even going to go into all that shpill about how it will balance out the nutrition and that it’s better for you yadiyada, because all of that is true, and people should be eating their veggies for all those reasons, but more importantly, I want bacon recipes with the right veggie pairings because I honestly think that it’ll make everything taste so much yummier. And so I give you Bacon & Spinach Quiche Cups!
I’m on a bacon roll. Looking into all sorts of recipes that would include bacon. Because, well, why not? I continued to be amazed at how bacon has found its way into all sorts of recipes, from sweet to savory and everything in between! So why not roll up a little California Club sandwich in a crescent roll? Bacon is a sure win, and how can you go wrong with some lime-drizzled avocado over melted pepper jack cheese?
Okay, so I have to come clean: I like to be very liberal with my measurements when it comes to baking, especially where it involves ingredients that I think no one would object to having more of. Like bacon. Especially bacon. So I’d pile on the yumminess. Along with cheese. Yep, I’ve been known to get a little bit carried away with the cheese. Hence the overflowing Bacon Quiche Cups that I ended up with. But hey, like I said, I’ve never gotten any complaints. So there.
