Bacon Double Cheeseburger Bites

This is true. We have a fascination for bacon. And when I say “we”, I really meant I.

I honestly can’t think of another tasty ingredient besides bacon that can be used in both savory and sweet baking. Oh okay, so you’ve named a few others, but you have to agree that bacon is probably the tastiest of them all! So you’ll understand that our (my) fascination with bacon is not without basis. And let’s face it, you’re totally benefiting from our (my) bacon fetish.

Bacon Double Cheeseburger Bites

We were pleasantly surprised at how popular the Immaculately Yummy Cheeseburger Pie recipe is, and so we thought, huh, there must be something about cheeseburgers that just gets people’s appetites going. Now just imagine what would happen when we add bacon to it! Man, I’m getting hungry just thinking of it! Best part? This is an easy scratch recipe, so yes, while the ingredient list is a bit lengthy, the instructions are as simple as can be. And as always, we promise the end results will be worth the trouble!

You Will Need:

  • 2 cups Immaculate Baking Co. ™ Organic All-Purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 4 tablespoons unsalted butter, melted
  • 2 cups whole milk
  • 2 eggs, beaten
  • 2 cup shredded Mild Cheddar cheese
  • 1 pound ground beef, cooked
  • 12 ounces thick cut bacon, cooked

Here’s How to Get Bakin’:

  1. Preheat oven to 350°F.
  2. In a large bowl, combine flour, baking powder, sugar and salt. Whisk to combine. Add butter, egg and milk. Whisk until combined. Add cheese, beef and bacon. Stir together until combined. Set aside.
  3. Spray 24 cup mini-muffin pans with cooking spray.
  4. Mix batter and add 1 heaping tablespoon scoop to each muffin cup. Each cup should be filled just over the top. Bake until golden brown, approximately 20-22 minutes.
  5. Allow to cool for 5 minutes, remove from muffin tin and serve with favorite burger toppings (ketchup, mustard, mayo, etc).

The Immaculate Baking team had a major bake day last Friday! We do this occasionally to well, help me out, so then we’re baking up enough fun recipes for me to share with you and you and you! But then of course it’s always just fun to hang out and make yummy food together as a team!

One of my favorite recipes that we made last week was this Immaculately Yummy Cheeseburger Pie. It’s as easy as it gets – chop up the onions (and whatever else veggies you want, we added in mushrooms, it was delish!), cook it up with the meat, pour it in your pie plate, get your pancake mix ready, add that to the plate and sprinkle on your cheese. And in 25 minutes bake time, dinner is served.

This would also be one of those super easy, make-it-ahead-of-time, freezable weeknight dinner! I think your kiddos will be thrilled to see this on the dinner menu tonight! I know I would 🙂

Immaculately Yummy Cheeseburger Pie 1

You Will Need:

  • 1 lb lean (at least 80%) ground beef
  • 1 large onion, chopped (1 cup)
  • ½ teaspoon salt
  • 1 cup shredded Cheddar cheese (4 oz)
  • ½ cup Immaculate Baking Co.™ Pancake & Waffle Mix
  • 1 cup milk
  • 2 eggs

Here’s How to Get Your Mix On:

  1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
  3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
  4. Bake about 25 minutes or until knife inserted in center comes out clean.

Mini Pretzel Sliders

Pretzel buns apparently make an ordinary burger seem that much fancier. Which got me thinking… we just came out with our own refrigerated pretzel dough a few months earlier, and we’re just starting BBQ/grilling season… so why not make our very own pretzel burger, Immaculate style? And that was exactly what I did!

Mini Pretzel Sliders

 

These are super easy to assemble. Feel free to add you own “twist” to these mini pretzel sliders that would be a great appetizer to your summer grilling parties this season! Oh, and I decided to bake the patties instead of grilling them only because I didn’t have a grill to work with, and I’m happy to inform you that the baked patties were actually really juicy! Here’s to hoping that you’ll be serving up some of your own pretzel burgers this summer!

You Will Need:

  • 1 can Immaculate Baking Co.™ refrigerated pretzel dough
  • 1 lb ground beef
  • Pepper and salt
  • 4 slices of cheese singles of your choice
  • If desired, add 1/3 cup onions, chopped

Here’s How to Get the Dough Rolling:

  1. Heat oven to 400⁰F. Grease cookie sheet. Unroll pretzel dough as one dough sheet. Cut the dough sheet in half and break apart the strips of dough. You’ll have a total of 16 strips. Twist the strips of dough into a pretzel as directed on the can.
  2. Add soda wash and sprinkle salt on each mini pretzel as directed on the can. Bake for 9-12 min. or until golden brown. Remove from cookie sheet.
  3. Mix pepper, salt and onions in ground beef. Shape beef mixture by tablespoonfuls into patties, and place on cookie sheet.
  4. Turn oven heat down to 350⁰F, and bake patties for 10-12 minutes. (I baked each side for about 5 min.)
  5. Remove pan from oven. Quarter each cheese singles into small cheese squares, and top each pattie with a cheese square.DSC03175
  6. Put pan back in the oven for about 30 seconds or until the cheese melts. Slice open each mini pretzel and sandwich the cheesy beef pattie

Giving it a bit more punch: I grew up in a kitchen where we typically marinated our meat in soy sauce and wine before cooking it. So naturally I did the same thing with the patties, which added a lot more flavors! Give it a try!

Cheesy BBQ Biscuit Cups

How is Memorial Day weekend over already? Somewhere between grilling brats and cheeseburgers, wolfing down way too many potato and pita chips, taking 2.5 hour long naps, and playing ultimate Frisbee and touch football in my flip flops, the long weekend just slipped away as quickly as it crept up on me.

Memorial Day weekend has always been one of those holidays that just sneaks up on you. You’ve barely recovered from the blasted winter and have yet to transition into your summer wardrobe, and then bang! Memorial Day is upon you and you’ve planned for nothing. As last minute as things are, we somehow always manage to fire up the grill and get some barbecue going! So I’m guessing that you still have your barbecue sauce and all the other 3 ingredients you’d need for this Cheesy BBQ Biscuit Cup handy!

Cheesy BBQ Biscuit Cups

 

The weekend may be over, but it’s only the beginning of the barbecue season!

You Will Need:

  • 1lb lean (at least 80%) ground beef, cooked, drained
  • 3/4 cup barbecue sauce
  • 1 can Immaculate Baking Co.® refrigerated buttermilk biscuits
  • 3/4 cup shredded Cheddar cheese (3 oz)

Here’s How to Get the Dough Rolling:

  1. In 10-inch nonstick skillet, mix cooked beef and barbecue sauce. Heat over medium-high heat, stirring constantly, until hot.
  2. Pull each biscuit apart into 2 layers; press each into 4-inch round. Place 1 round in each of 8 greased regular-size muffin cups. Firmly press in bottom and up side, forming 1/4-inch rim. Fill with beef mixture; sprinkle with cheese.
  3. Bake at 375°F 13 to 15 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from pan.

Biscuit Taco Bake

Call me an old-fashioned gal, but when I think sports game and viewing parties, I think bacon and cheeseburger and nachos and tacos. I may have a sweet tooth, but I am an even bigger savory junkie.

Thanks to Lynsey, our Director of Awesome, who was “voluntold” to whip up some Biscuit Taco Bakes in her kitchen, you will now have one more awesome game day recipe to file away!

You Will Need:

  • 16 ounces taco sauce
  • 1 can Immaculate Baking Co.® refrigerated Buttermilk Biscuits
  • 1 -1 1/2 cup shredded sharp cheddar cheese (4 to 6 ounces)
  • 1 -1 1/2 cup shredded mozzarella cheese (4 to 6 ounces)
  • 1 (2 1/4 ounce) can sliced ripe olives, drained
  • 1/2 lb lean ground beef
  • 1/4 cup chopped red bell pepper, if desired (optional)
  • 1/4 cup chopped green pepper, if desired (optional)
  • 4 ounces mushroom stems and pieces, drained, if desired (optional)

Here’s How to Get the Dough Rolling:

  1. Heat oven to 350°F degrees. Lightly grease 13 x 9 baking dish. Spread taco sauce evenly over bottom of greased dish.
  2. Separate dough into 8 biscuits; cut each biscuit into 4 pieces. Place biscuit pieces in taco sauce, turn to coat.
  3. Sprinkle biscuits with 1/2 cup to 1 cup of each of the cheeses and olives, and mix gently. Bake 15 to 18 minutes or until bubbly.
  4. After biscuits are baked, cook ground beef, peppers and mushrooms in large skillet. Cook until beef is thoroughly cooked, drain.
  5. Sprinkle remaining cheeses over mixture in casserole; top with ground beef mixture.
  6. Bake additional 5 to 7 minutes or until mixture is bubbles around edges.
